Our Story

It started with a French press and a stubborn streak.

Fun name. Serious coffee.

We started out a lot like you. A favorite mug, a morning routine, and a couple of trusted ways to make it happen. For us that was a French press and a programmable drip machine we set the night before. Nothing fancy. Just coffee we looked forward to.

The curiosity started with something small. We brewed the same coffee two ways, once in the French press and once in the drip machine, and the two cups tasted like different coffees entirely. That was the crack in the door. If one bag could taste that different depending on how we made it, what else were we missing? We read everything. We tried what felt like every brand on every shelf. We got a little obsessive about it, which, looking back, probably tells you where this was headed.

The bitter thing we couldn't unlearn

Somewhere in all that trial and error we figured out what we actually didn't like. Bitterness. So much coffee tastes burnt and sharp, and most of us just accept that as the price of a cup. It turns out you don't have to.

Every coffee bean is wrapped in a papery skin called chaff. When chaff burns, it turns your coffee harsh and bitter. We roast with an air roaster, which lifts the chaff away before it has the chance to scorch. What's left is smooth, clean, and easy to drink, with all the flavor and none of the ashtray. Dark chocolate and praline in Afraid of the Dark. Milk chocolate and almond in Happy Medium. Real, specific flavors you can actually taste, because nothing's hiding behind the burn.

Roasted fresh, shipped fresh

We roast in small batches to keep up with what people are actually drinking, not to fill a warehouse. So the bag that shows up at your door is fresher than anything that's been sitting on a grocery store shelf for who knows how long. Coffee is best in the first weeks after it's roasted, and we'd rather you catch it right in that window.

A little emotional support in every bag

Mental health is close to us, and it's baked into who we are, starting with the name. A portion of every purchase goes to support mental health causes. Our Happy Medium bag carries the face of Dylan, our Golden Retriever we lost to cancer in 2024, and it's a daily reminder of why this matters to us. We roast the coffee, we pack the bags, and most weekends you'll find us at a local market handing out samples and talking way too long about roast levels with anyone who'll listen. We work with green-coffee suppliers who care about quality and doing right by the people who grow it.
