Ritual at Dawn is our gentle, easygoing light roast — smooth, comforting, and quietly satisfying. Crafted from Brazilian coffee beans and roasted just enough to bring out notes of milk chocolate and roasted peanuts, it’s the kind of cup that feels like a soft start to your day.

 

This light-bodied coffee offers medium acidity with a mellow, balanced profile. It’s darker than Then It Dawned on Me but lighter than Happy Medium, landing in that sweet spot for drinkers who enjoy light roasts without the bright, fruit-forward intensity.

 

Flavor-wise, Ritual at Dawn leans warm and familiar. The milk chocolate notes add smoothness, while the roasted peanut character brings a cozy, nutty depth. It’s approachable, comforting, and especially enjoyable black — though it plays nicely with cream too.

This light roast features a light body and medium acidity, giving each sip a bright, balanced feel that's easygoing and refreshing.  It sits a touch darker than Then It Dawned on Me but lighter than Happy Medium, landing in a comfortable zone for lovers of gentle, easy-to-enjoy roasts.

Flavor-wise, expect creamy milk chocolate notes paired with the warm, nutty richness of roasted peanuts.  The profile feels familiar and inviting - clean enough to savor on its own and smooth enough to enjoy with a touch of cream or sugar.

How We Roast

We use an electric fluid-bed (air) roasting process that lifts and roasts the beans on a stream of hot air instead of tumbling them in a hot metal drum.  

During the roast, the chaff naturally separates and is removed - rather than being baked back into the coffee.  This helps prevent bitter, smoky flavors and keeps the cup clean and smooth. 

Every batch is roasted hands-on by our founder and roaster Adam, who oversees the process from start to finish - from weighing the green coffee to dialing in the roast profile to cooling and packaging the final beans. Nothing is automated, rushed, or outsourced.  Each batch gets the time, attention, and care it deserves.

Really good flavor

Trying to find a balance with my Black and Decker drip coffee machine. Your reccomanded 7 scoops for 4 cups so I went 14 for 8 cups only to find it extremely bitter. They reccomanded no more than 8 scoops for 8 cups because any more will make the built in grinder over extract and cause butter coffee..so I will experiment
